Charles Bove’s base of operations is 9 miles of underground stone cellars that stay at a year round temperature of 53 degrees Fahrenheit. This consistent temperature, and humidity, make these cellars the perfect place to create and store the many sparkling wines made by the firm. This rose sparkler is made from Cabernet Franc, which lends acidity and tannin, and Gamay, which brings a nice fruitiness, making a balanced wine perfect for pairing with a wide range of food or for serving on it’s own
